Owner-chef Yuichiro Uesaka creates innovative dishes by combining local Kyoto vegetables with ingredients and cooking methods from around the world. Drawing on his extensive experience, he crafts a set course menu for both lunch and dinner, featuring multiple dishes.
One of the restaurant's key concepts is pairing drinks with each dish. Alcohol pairings, which include the finest wines from around the globe, are updated every two months. The restaurant also features sake and other international beverages. For non-alcoholic pairings, the chef employs a creative approach, designing original drinks from scratch to perfectly complement each dish.

Born in 1984 in Kyoto, Japan.After graduating from Taiwa Gakuen Kyoto School he went train at hotels and restaurants in Kyoto. He moved to Italy at the age of 27. He worked at Ristorante Pinocchio in Piedmont and La Compagnia dei Vinattieri in Tuscany, After training, he worked as a sous chef at Ristorante CIELO, a Michelin star restaurant in Puglia. After returning to Japan, he joined "Ristorante t.v.b" in Gion, Kyoto, where he became chef in 2017. In April 2023, he open "Restaurant DA CIRO" in Gion, Kyoto.
Drink pairing with food is one of the concepts of the same point.
Alcoholic pairings are made with wines from around the world, selected to best complement the bimonthly course menu.Occasionally, we also use sake, liquors from around the world, and cocktails. In addition, non-alcoholic pairings are created from a chef's point of view, and we offer our own original drinks to match the dishes.

We directly communicate with the producers of each ingredient, such as Higuchi Farm in Kyoto, Iyasaka Farm in Kyoto, Nishiyama Farm in Wakayama, and Il Ricottaro in Okayama, to examine the ingredients by actually visiting their sites, We also visit the Kyoto Central Wholesale Market every morning to directly purchase ingredients, We use only the finest ingredients to create the best dishes.
